Churro Cheesecake Donuts

This fusion dessert sounds amazing! Here’s a recipe that combines the cinnamon-sugar goodness of churros with the creamy richness of cheesecake, all in a convenient donut form:

Ingredients:

  • For the donuts:
    • 1 ½ cups all-purpose flour  
    • 1 ½ teaspoons baking powder
    • ½ teaspoon salt
    • ½ cup granulated sugar
    • ½ cup unsalted butter, softened
    • 2 large eggs
    • ½ cup milk
    • 1 teaspoon vanilla extract
  • For the cheesecake filling:
    • 8 ounces cream cheese, softened
    • ¼ cup granulated sugar
    • 1 large egg yolk
    • 1 teaspoon vanilla extract
  • For the churro coating:
    • ½ cup unsalted butter, melted
    • ½ cup granulated sugar
    • 1 tablespoon ground cinnamon

Equipment:

  • Donut pan
  • Piping bag or ziplock bag with a corner snipped off
  • Large bowl
  • Medium bowl
  • Whisk

Instructions

Get Started:

  1. Preheat your oven to 350°F (175°C). Grease a donut pan.

Make the Donut Batter:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.  
  3. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Don’t overmix.

Make the Cheesecake Filling:

  1. In a medium bowl, beat the cream cheese and sugar until smooth.
  2. Beat in the egg yolk and vanilla extract.

Assemble the Donuts:

  1. Spoon the donut batter into the prepared donut pan, filling each cavity about two-thirds full.
  2. Pipe or spoon the cheesecake filling into the center of each donut.
  3. Bake for 15-20 minutes, or until golden brown.
  4. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Make the Churro Coating:

  1. While the donuts are cooling, melt the butter for the coating.
  2. In a shallow dish, combine the sugar and cinnamon.

Coat the Donuts:

  1. Dip each donut in the melted butter, then roll in the cinnamon-sugar mixture to coat.

  • For extra fluffy donuts, use cake flour instead of all-purpose flour.
